Title: Bartender
Contract Term: 6/2 Updated 7/1/02
Job Responsibilities:
Provide exceptional beverage service in all guest and/or crew areas including Castaway Cay to DCL's standards
Knowledge and understanding of preparing and serving international cocktails (from classics to exotics)
Basic wine knowledge of house wines, and ability to describe when necessary
Good understanding of chemistry and the basic principals in cocktail making.
Monitoring and tracking all beverage charges and checks procedures
Request proof of identity to verify age of guest before serving alcoholic drinks to guests that appear to be underage
Have the ability and confidence to discontinue serving alcohol to specific guests when necessary
Practice suggestive selling and up-selling techniques
Maintain friendly and professional attitude towards guests and crew, provide leadership to the bar team
Understands food safety & sanitation programs and maintain USPH standards throughout work area
Accountable for stocking bar and inventory control, and beverage cost per location
Accountable for beverage revenues for assigned venue
Ability to prepare visual displays throughout work location (behind the bar an out in the lounge)
Additional duties may include working in the crew bar, stocking the bar, serving drinks to guests, doing dishes in absence of the steward, cleaning tabletops, bar counters and all other areas within the bar location
Ability to sell beverages on deck bars or lounges as per schedule
Participate on all training classes as well as all scheduled meetings.
Reports to Head Bartender.
Qualifications: Candidate must be open minded to any training and continuous improvement of service techniques required to achieve a higher standard
Candidate must be able to lead crew (Bar servers and assistants)
Must have knowledge of international cocktail recipes and alcohol brands
Should have a very positive outlook and outgoing personality
Must be courteous, efficient, and positive attitude and personality
Experience: Minimum 5 years experience in the bar-trade ashore (Ship experience preferred but not necessary) Leadership experience preferred
Flair bartending experience preferred
