Fractionation of wheat bran to create new functional food ingredients
We are looking for a PhD student who is interested in research on how structural and functional properties of foods affect their properties. The development towards a sustainable society requires new approaches to produce materials and food. Wheat bran is a side stream from grinding of wheat that contains many interesting components. The work will include design of the fractionation process and functional characterization of the different fractions and their use in model food systems.
The general aim of this PhD project is to create new functional ingredients from wheat bran through fractionation, pre-processing and extraction. This will mean to characterize and understand the properties of the ingredients, control these properties through process and raw materials, as well as establish the relationship between the ingredients and their function in model products such as emulsion, foam and gels.
This PhD-work will have supervisors both at university and at Lantmännen. The academic part will be conducted in a research-intensive environment at the Biocenter at Ultuna campus in Uppsala. Processing part will be done at Lantmännen. The main focus for this appointment lays in the study of structure and functional properties and fractions of them.
Location: Mainly SLU Uppsala and Lantmännen Head office in Stockholm, the work will also be performed at other Lantmännen facilities.
The research project extend up to five years and you will be employed by Lantmännen. This is a full time employment where you will spend 80 % of the time on the assigned research project, and beyond this, you will get a unique insight into the business of Lantmännen as you will spend the rest of the time working there. After finishing the research project there will be an opportunity to continue your career within Lantmännen.
