Silversea cruises, world leader in luxury cruising operating four vessels on world wide itineraries is currently recruiting for the following positions:
Sous Chef Terrace Café/ Le Champagne/ La Saletta
Performance / Responsibilities
This position contributes to the Company's Mission, values and strategic priorities by implementing the principles of Aggressive Hospitality in the following areas:
.ensure complete guest satisfaction by providing guests with the highest quality product by supervising the preparation of food
.control food cost through
.maintain hygienic standards according to U.S.P.H
.Train and retain excellent crew.
In carrying out these responsibilities, the Sous Chef undertakes duties in the four areas of the professional performance score card:
. Technical
. Safety
. Silver Service
. Social
The duties in each of these performance areas are detailed below. Theses duties are undertaken within company policies, standards, and operating manuals.
Technical duties
1.Provide guests with the highest quality product by supervising the preparation of food
2.Assists Executive Chef with menu planning
3.Attends daily menu briefing of lunch and dinner
4.Presentation of the show plates for galley crew
5.Menu briefing for the waiters for team dinners
6.Supervision and daily schedule planning for galley crew
7.Ensures economical procedures and minimization of food waste
8.Assists F&B Controller during loading
9.Controls galley teams handling of all ship's equipment
10. Clean and maintain area and equipment according to USPH standards
11. Careful use of ship equipment and reporting of faulty or broken equipment
12. Assist managers with training and induction of new personnel
13. Undertake all other duties as requested by supervisor.
Terrace Café
a. Responsible for all food and theme dinners in Terrace café
b. Checks and supervises service hours (breakfast, lunch, dinner), checks arrangement of plates and ensures immediate service
c. In charge of pool BBQ set up and ensures smooth operation during BBQ nights
Le Champagne / La Saletta
a.Responsible for all food served
b.In charge of all cooking and food quality
c.In charge of all cooking demos to promote the Saletta / Le Champagne
Safety duties
14. Carry out designated role in crew and passenger safety drills according to regulations.
15. Comply with the Company's safety and pollution prevention regulations and operating procedures.
Silver Service duties
16. Complete the Silver Service CD-room program.

Utbildning/Erfarenhet
.Minimum age is 21 years
.Standard European cooking background and
.7 years cooking experience
.at least 1 year Sous Chef experience in 5-start operation
.at least 2 year Sous Chef experience in Michelin star / Relaix Chateau (Saletta/Le Champagne)
.* Knowledge of U.S.P.H. standards and procedures.
